Here are some of my favorite things to do in Florida, otherthan what you've listed:

Airboat Rides - Boggy Creek Airboat Rides in Poincicana are a lot of fun! Located off Poincicana Blvd. and Hwy 192, just outside Kissimmee.

Beaches! My favorite beach is Siesta Key, located in Sarasota, Florida - approximately 1 hr 45 minutes south of Orlando. By far, the softest, whitest-purest sand in the nation. Just a nice nice beach. I also enjoy Cocoa Beach near Kennedy.

Speaking of Kennedy - visit Kennedy Space Center! That place is amazing!

Beaches, try going to Cape Canaveral and the Kennedy Space Center. If you are going to be staying near Orlando, try Cocoa Beach and the surf shops. If you are going to the Gulf Coast, try Sarasota/Venice/Clearwater beaches. Small towns in Florida are pretty nice: Mt. Dora, Arcadia with it's rodeo; Plant City and the strawberry festival at the beginning of March.

The Old Towne Fair is pretty cool, they have a wide variety of different places to check out, attractions, shops, bars, restaurants, and rides.

Wonder Works is great, even for the kids.

you could take a scenic drive off the beet-in path and go to sugar loaf mountain it's the highest point in Florida and it's only about 30 Min's from the Disney area. you could also take a drive to Mt. Dora where they have antique stuff.
